Bacon and Potato Bake

Ingredients

200g (7oz) chopped lean bacon
4 large potatoes sliced or equal
3 onions thinly sliced
25g (1oz) grated cheese
600 ml (1 pint) semi skimmed milk
50g (2oz) sunflower margarine
3 tbsp flour  

Serves 4

Method

  1. Preheat oven to 200C / 180 Fan/ Gas Mark 6. Melt the margarine in a pan, add 3 tbsp flour and cook for 1 minute. Remove from the heat, stir in the milk. Return to heat and bring to the boil then simmer for 3-4 minutes before adding the cheese.
  2. Layer a shallow baking dish with the sliced potatoes, onions and bacon, then pour over the sauce. Cover with foil and cook for 1 hour. Reduce heat to 180C / 160F / Gas Mark 4. Uncover and cook for another 25 minutes until golden.

Top Tip

Serve with two portions of vegetables of your choice and this meal will provide you with 2 portions of your 5-A-Day.
