Bacon and Tomato Soup

Ingredients

1 tbsp olive oil or rapeseed oil
2 medium onions, finely chopped
200g (8oz) lean smoked bacon, diced
2x 400g cans of chopped tomatoes or 2 ½ lb large ripe tomatoes
1 tbsp tomato puree  

Serves 4

Each serving = ½ portion your 5-A-Day  

Method

  1. Heat the oil in a large pan. Add the onions and bacon and fry for 5-7 minutes, stirring occasionally or until the onions have softened.
  2. Add the tomatoes and tomato puree and simmer gently for 10-15 minutes. Pour into a blender or if using a hand blender, blend until smooth.

Top Tip

Serve in warmed bowls with crusty brown bread.
