Cheesy Baked Potatoes

Ingredients

4 jacket potatoes
100g (4oz) grated Cheddar Cheese
4 slices lean back bacon

Serves 4

Method

  1. Bake potatoes in a hot oven 220/ Gas Mark 7 until tender. Alternatively, place pricked potatoes in a microwave oven and cook on maximum for 6 minutes then place in a very hot oven on the top shelf for 6-8 minutes for the skins to crisp.
  2. Cut bacon into small pieces and grill on a piece of foil for 5 minutes until cooked.
  3. When the potatoes are cooked, cut in half, gently scoop out the potato into a bowl. Mash potatoes with a little sunflower margarine until smooth then mix in the cheese and bacon and carefully return to the potatoes, piling up as necessary. Stand potatoes on a baking sheet and return to the oven for 10 minutes.

Top Tip

Delicious served with a bowl of salad or half a tin of beans. This will give you 1 portion of your 5-A-Day.
