Creamy Broccoli Soup
Ingredients
1 large head of broccoli (cut in to florets)
2 large onions (sliced)
600 ml (1 pint) semi skimmed milk
600 ml (1pint) of vegetable stock (1 vegetable stock cube)
1 clove garlic (crushed)
1 tsp flour
1 tsp rapeseed or olive oil
Serves 4
Each serving 1 portion of your 5-A-Day
Method
Cook the onions and garlic in a spoonful of oil cook for 3-4 minutes. Add the broccoli, stir well and sprinkle over the flour. Add the milk and vegetable stock. Bring to the boil then simmer for 30 minutes or until the broccoli is soft then blend until smooth.
Top Tip
Frozen broccoli and cauliflower can be used for this soup. |
