Carrot and Potato Topped Beef Pie
Ingredients
450 g (1 lb) mince beef (lean)
1 onion (thinly sliced)
1 tbsp flour
330 ml (10 fl oz) beef stock (made from a stock cube)
1 tbsp Worcestershire Sauce
900 g (2 lb) potatoes
2 large carrots diced
3 tbsp semi skimmed milk
1 tbsp of tomato puree
Serves 4
Each serving = 1 portion of your 5-A-Day
Method
Dry fry the beef in a large pan over a high heat for 3 minutes until it changes colour and seals. Add onion and the flour. Cook for 1 minute stirring all the ingredients together. Gradually blend in the stock, tomato puree and Worcestershire sauce. Season with a little pepper. Bring to the boil then simmer for 20 -30 minutes
- Meanwhile cook the potatoes and carrots together in a pan, when soft, mash together. Mix in the milk.
- Transfer the meat into a dish, spoon the potatoes and carrot mixture over the meat and grill under a hot grill to brown slightly.
Top Tip
Serve with a portion of peas or green beans per person and this meal will provide 2 portions of your 5-A-Day.
Most potatoes other then new potatoes can be used for mashing.
