Chunky Chicken and Ham Chowder

 Ingredients

1 small sliced onion
1tbsp rapeseed oil or olive oil
2 leeks thinly sliced
4 medium potatoes cut into small cubes
1 tbsp flour
700ml (1 ¼ pints) semi skimmed milk with 1 chicken stock (cube)
2 cooked chicken breast skin removed and cut into chunks
2 thick slices uncooked ham (chopped)
150g (6oz) frozen peas
Small tin sweet corn  

Serves 4-5

Each serving = 1 portion of your 5-A-Day  

Method  

  1. Heat the oil in a large pan and fry the onion for 1-2 minutes. Add the leeks and fry until softened about 2 minutes. Stir in the potatoes and flour, then slowly blend in the milk and chicken stock stirring with a wooden spoon. Bring to the boil and simmer uncovered, for 10-12 minutes until the potatoes are soft.
  2. Add the chicken and ham, cook for a further 5 minutes, then add the frozen peas and sweet corn, season with a little pepper.  

Top Tip  

Serve with crusty brown bread.
