Chicken Fajitas

Ingredients

Packet fajita mix
450g (1lb) chicken breast
1 packet tortillas
1 large onion (sliced into wedges)
2 peppers, 1 red, 1 yellow cut into strips
1 tsp olive oil or rapeseed oil
1 garlic clove (crushed)
Crème fraiche ( fat free)  

Serves 4

Each serving = 1 portion of your 5-A-Day

Method

  1. Heat the oil in a pan and cook the onion and garlic over a low heat for 2 minutes. Add the chicken, stir until coloured for 2 minutes then add half the spice mix and the peppers. Stir well, cook for a further 4-5 minutes.
  2. Warm the Tortillas in a frying pan for a few seconds fill with the mixture and add a little crème fraiche, roll up and serve.

Top Tip

Serve this with a bowl of your favourite salad and this meal will provide 2 portions of your 5-A-Day.
