Easy Fish Pie

Ingredients for the filling:-

225g (8oz) boneless cod
85g (3oz) smoked haddock fillet
semi skimmed milk for poaching
1 garlic clove crushed
2 leeks finely sliced
small cup of frozen peas (defrosted) or tinned
2 tbsp Dijon mustard
100ml (3.5 fl oz) half fat crème fraiche
1 tin of sweet corn  

Ingredients for the topping:-  

900g (2lb) potatoes (for mashing)
2 tbsp Sunflower margarine
60ml (1 pt) warm semi skimmed milk

Serves 4

Each serving = ½ portion of your 5-A-Day  

Method  

  1. To prepare the mash, cook the potatoes for 15-20 minutes until tender, and then drain well.
  2. Place the fish in a frying pan, cover with the milk and poach for 8 minutes. Then remove and flake the fish into large chunks.
  3. Heat the oil then fry the garlic and leek for 5 minutes. Stir in the peas, crème fraiche and Dijon mustard. Heat through, stirring in the chives and adding the fish. Spoon into a heatproof dish.
  4. Drain the potatoes, and then add the margarine, warm milk and mash together. Spoon the mash potatoes over the fish mixture and place under the grill until golden.

Top Tip

Serve with sweet corn to increase your 5-A-Day.
