Vegetable Gratin
Ingredients
225g (8oz) cauliflower, cut into florets
225g (8oz) broccoli, cut into florets
25g (1oz) sunflower margarine
300ml (½ pint) semi skimmed milk
1 tbsp corn flour
1 tsp Dijon Mustard
75g (3oz) mature Cheddar Cheese (grated)
Serves 4
Each serving = 1 portion of your 5-A-Day
Method
- Cook the cauliflower and broccoli together in a pan of hot water for 8 minutes.
- Melt the margarine in a saucepan. Blend the corn flour with a little of the milk. Gradually add the remaining milk to the melted margarine, stirring constantly over a low heat until sauce thickens then mix in the mustard and half the cheese.
- Arrange the vegetables in a baking dish and pour over the sauce. Sprinkle with the remaining cheese, place under a hot grill until golden brown.
Top Tip
Serve with grilled crispy bacon. |
