Lentil and Bacon Soup
Ingredients
300g (12oz) 6 carrots
4 small potatoes
2 onions thinly sliced
1.2 litres (2 pints) of vegetable stock (made from stock cube)
100g (4oz) red lentils
3 slices back bacon (fat removed, cut into small pieces)
1 tsp rapeseed or olive oil
Serves 4
Each serving = 1 portion of your 5-A-Day
Method
- Prepare vegetables by peeling and finely chopping the carrots, onion and potatoes.
- Cook the onion in a tsp of oil until soft for about 1-2 minutes, then add the bacon cook for a further minute.
- Place the stock, vegetables, potatoes and lentils into the pan bring to the boil then reduce the heat and simmer for 30 minutes or until vegetables are cooked.
- Allow the soup to cool then blend with a hand blender.
