Lentil and Bacon Soup

 Ingredients

 300g (12oz) 6 carrots
4 small potatoes
2 onions thinly sliced
1.2 litres (2 pints) of vegetable stock (made from stock cube)
100g (4oz) red lentils
3 slices back bacon (fat removed, cut into small pieces)
1 tsp rapeseed or olive oil  

Serves 4

Each serving = 1 portion of your 5-A-Day  

Method  

  1. Prepare vegetables by peeling and finely chopping the carrots, onion and potatoes.
  2. Cook the onion in a tsp of oil until soft for about 1-2 minutes, then add the bacon cook for a further minute.
  3. Place the stock, vegetables, potatoes and lentils into the pan bring to the boil then reduce the heat and simmer for 30 minutes or until vegetables are cooked.
  4. Allow the soup to cool then blend with a hand blender.
