Cheesy Macaroni  

Ingredients  

225g (8oz) macaroni
25g (1oz) sunflower margarine
4 spring onions (trimmed and finely chopped)
25g (1oz) flour
1 tsp mustard powder
450ml ( ¾) pint semi skimmed milk
100g (4oz) mature Cheddar Cheese (grated)
2 tomatoes (sliced)
Black pepper  

Serves 4

Each serving = 1 portion of your 5-A-Day  

Method  

  1. Pre heat the oven to 190c/375f/Gas Mark 5. Cook the Macaroni in a large pan of boiling water for about 10 minutes or as directed on the packet, then drain.
  2. Heat the margarine in a pan and fry the spring onions for 2 minutes until soft. Stir in the flour and mustard powder and cook for 1 minute. Remove from the heat and gradually add the milk, stirring constantly. Return to the heat and bring to the boil, stirring all the time. Simmer for 2 minutes until thick and smooth.
  3. Remove from the heat and stir in 75g/3oz of the cheese and season with the black pepper. Stir in the macaroni and transfer to a shallow oven proof dish. Top with the tomato slices. Sprinkle with remaining cheese and bake for about 20 minutes until golden brown.

Top Tip

Serve with a green salad and get 2 portions of your 5-A-Day.
