Spanish Omelette

Ingredients

1 large onion thinly sliced
1-2 cloves garlic crushed
1 courgette thinly sliced
1 red pepper
6 eggs
Black pepper (to taste)
2 large boiled potatoes (diced and cooked)
2 oz frozen peas (thawed)
2 oz Cheddar Cheese (grated)
2 tomatoes peeled and chopped
2-3 tsp rapeseed or olive oil

Serves 4

Each serving = 1 portion of your 5-A-Day  

Method  

  1. Heat 1 ½ teaspoons of oil in a frying pan, add garlic fry gently for 2-3 minutes, then add courgette and pepper and cook for about 5 minutes stirring from time to time until tender.
  2. Beat the eggs, add pepper and remaining oil to pan and when hot, pour in the egg mixture. Stir well and sprinkle Potato, peas, and tomato over omlette.
  3. Cook gently for about 5 minutes or until omlette is set underneath then sprinkle with cheese and put the pan under the grill for a few minutes until the cheese has melted.

Top Tip

Serve with a salad and this meal gives you 2 portions of your 5-A-Day
