Spanish Omelette
Ingredients
1 large onion thinly sliced
1-2 cloves garlic crushed
1 courgette thinly sliced
1 red pepper
6 eggs
Black pepper (to taste)
2 large boiled potatoes (diced and cooked)
2 oz frozen peas (thawed)
2 oz Cheddar Cheese (grated)
2 tomatoes peeled and chopped
2-3 tsp rapeseed or olive oil
Serves 4
Each serving = 1 portion of your 5-A-Day
Method
- Heat 1 ½ teaspoons of oil in a frying pan, add garlic fry gently for 2-3 minutes, then add courgette and pepper and cook for about 5 minutes stirring from time to time until tender.
- Beat the eggs, add pepper and remaining oil to pan and when hot, pour in the egg mixture. Stir well and sprinkle Potato, peas, and tomato over omlette.
- Cook gently for about 5 minutes or until omlette is set underneath then sprinkle with cheese and put the pan under the grill for a few minutes until the cheese has melted.
Top Tip
Serve with a salad and this meal gives you 2 portions of your 5-A-Day |
