Pasta, Cheese and Broccoli

Ingredients

175g (6oz) pasta
225g (8oz) broccoli florets
1 tbsp olive oil or rapeseed oil
1 large onion, sliced
1 tbsp corn flour
300ml (½ pint) semi skimmed milk
60g (2oz) Cheddar Cheese, grated  

Serves 4  

Each serving = ½ portion of your 5-A-Day  

Method

  1. Cook the pasta in boiling water according to the directions on the packet, adding the broccoli during the last three minutes of cooking time and then drain.
  2. In a non-stick pan, sauté the onion in the olive oil for 5 minutes until softened.
  3. Blend the corn flour with a little milk in a jug. Gradually add rest of the milk. Slowly add to the onion, stirring continuously until the sauce has thickened. Stir in the cheese. Add to pasta.

Top Tip

Serve this with a salad and this meal will give you 1 ½ of your 5-A-Day.
