Pasta, Cheese and Broccoli
Ingredients
175g (6oz) pasta
225g (8oz) broccoli florets
1 tbsp olive oil or rapeseed oil
1 large onion, sliced
1 tbsp corn flour
300ml (½ pint) semi skimmed milk
60g (2oz) Cheddar Cheese, grated
Serves 4
Each serving = ½ portion of your 5-A-Day
Method
- Cook the pasta in boiling water according to the directions on the packet, adding the broccoli during the last three minutes of cooking time and then drain.
- In a non-stick pan, sauté the onion in the olive oil for 5 minutes until softened.
- Blend the corn flour with a little milk in a jug. Gradually add rest of the milk. Slowly add to the onion, stirring continuously until the sauce has thickened. Stir in the cheese. Add to pasta.
Top Tip
Serve this with a salad and this meal will give you 1 ½ of your 5-A-Day. |
