Cheese, Cabbage and Potato Bake  

Ingredients

4 large potatoes
½ white shredded cabbage
2 large onions chopped
Pinch of pepper
1 oz sunflower margarine
100g (4oz) mature cheddar cheese grated  

Serves 4

Each serving = ½ portion of your 5-A-Day  

Method

  1. Cook the cabbage, onions and potatoes in a large pan together for 25 minutes or until softened then drain.
  2. Mash together with a little semi skimmed milk, margarine and pepper.
  3. When mixed together add half of the cheese to the potato mixture.
  4. Put the potatoes into an ovenproof dish and sprinkle with the remaining cheese cook in a moderate oven for about 20 minutes and then serve.

Top Tip

Serve this with a portion of peas or sweet corn and this meal will provide 2 portions of your 5-A-Day.
