Roasted Vegetables and Pasta
Ingredients
1 red, yellow and green pepper sliced
1 large onion sliced
1 courgette sliced
1 punnet small tomatoes or 4 tomatoes halved
1 tbsp olive oil or rapeseed oil
3 parsnips sliced
3 rosemary stalks (optional)
4 cloves garlic crushed
300g (10oz) pasta shapes
Serves 4
Each serving = 2 portions of your 5-A-Day
Method
- Place all ingredients (except the pasta!) onto a roasting tray. Pour over oil, mix together with your hands and sprinkle with a little pepper. Roast in a hot oven approximately 30 – 40 minutes.
- Drop the pasta into boiling water and cook according to instructions on packet about 9-12 minutes drain, then toss everything together then serve with grated cheese. Serve Immediately

For a special treat, try using red onions – looks great, tastes delicious! |
