Salmon and Pea Fishcakes
Ingredients
500g (1lb 2oz) potatoes cooked and mashed
418g can of salmon (boneless, skinless and drained)
140g (5oz) frozen sweet peas (defrosted)
1tbsp tartare sauce
3tbsp flour
2 tbsp rapeseed or olive oil
Serves 4
Each serving = 1 portion of your 5-A-Day
Method
- Flake the drained salmon into a bowl. Add the peas, tartare sauce and mashed potato add a little pepper to taste. Mix well then using floured hands shape into 8 flat fish cakes. Dust with flour.
- Heat the oil in a frying pan over a medium heat for 3-4 minutes each side, until golden.
Top Tip
Serve with a bowl of salad and get 2 portions of your 5-A-Day.
This is an excellent way of using mashed potatoes saved from the day before and kept in the fridge. |
