Sausage and Mash Pie

Ingredients

1 kg (2 ½ lb) potatoes peeled and cut into large chunks
1 tsp rapeseed or olive oil
1 onion peeled and finely sliced
1 leek, trimmed, washed and finely sliced
450g (1lb) low fat sausage
1 400g (14oz) can of tomatoes
1 400g (14oz) can of baked beans
1 tbsp Worcestershire sauce (optional)
25g (1oz) sunflower margarine
3 tbsp semi skimmed milk
75g (3oz) Cheddar Cheese grated

Serves 6

Each serving = 1 portion of your 5-A-Day

Method

Preheat oven to 190c/375f/Gas Mark 5. Cook the potatoes in a large pan of boiling water for 10-15 minutes until tender.

  1. Heat the oil in a frying pan and fry the onion and leek for 5 minutes. Add sausage and fry for 5 minutes turning all the time. Add the tomatoes, beans and Worcestershire sauce. Simmer for 15 minutes, stirring occasionally. Drain the potatoes and mash with milk and margarine until smooth.
  2. Spoon the sausage mixture into a large ovenproof dish, top with the mash and sprinkle over the cheese. Bake for 15-20 minutes until golden brown and serve.

Top Tip

Serve this with a portion of your favourite vegetable and this meal provides 2 portions of your 5-A-Day.
