Sausage and Mash Pie
Ingredients
1 kg (2 ½ lb) potatoes peeled and cut into large chunks
1 tsp rapeseed or olive oil
1 onion peeled and finely sliced
1 leek, trimmed, washed and finely sliced
450g (1lb) low fat sausage
1 400g (14oz) can of tomatoes
1 400g (14oz) can of baked beans
1 tbsp Worcestershire sauce (optional)
25g (1oz) sunflower margarine
3 tbsp semi skimmed milk
75g (3oz) Cheddar Cheese grated
Serves 6
Each serving = 1 portion of your 5-A-Day
Method
Preheat oven to 190c/375f/Gas Mark 5. Cook the potatoes in a large pan of boiling water for 10-15 minutes until tender.
- Heat the oil in a frying pan and fry the onion and leek for 5 minutes. Add sausage and fry for 5 minutes turning all the time. Add the tomatoes, beans and Worcestershire sauce. Simmer for 15 minutes, stirring occasionally. Drain the potatoes and mash with milk and margarine until smooth.
- Spoon the sausage mixture into a large ovenproof dish, top with the mash and sprinkle over the cheese. Bake for 15-20 minutes until golden brown and serve.

Serve this with a portion of your favourite vegetable and this meal provides 2 portions of your 5-A-Day. |
