Bacon and Potato Spanish Tortilla

Ingredients

1 onion (thinly sliced)
300g (12oz) new potatoes thinly sliced
4 rashers back bacon (trimmed of fat) and chopped into small pieces
6 large eggs
75g (3oz) mature cheddar cheese (grated)
2 tsp rapeseed or olive oil

Serves 4 – 5  

Method  

  1. Heat the oil in a small non-stick pan, add the onion and potatoes and fry for 8 minutes turning frequently until tender but not browned. Add the bacon and fry for 2 minutes, meanwhile beat the eggs in a large bowl. Season with pepper, then stir in the cheese.
  2. Pour the egg and cheese mixture into the pan, cook gently until firmly set, turn over in the pan or cook under a hot grill for a few minutes until set.

Top Tip

Delicious served with grilled tomatoes. One tomato per person gives this meal 1 portion of your 5-A-Day.
