Bacon and Potato Spanish Tortilla
Ingredients
1 onion (thinly sliced)
300g (12oz) new potatoes thinly sliced
4 rashers back bacon (trimmed of fat) and chopped into small pieces
6 large eggs
75g (3oz) mature cheddar cheese (grated)
2 tsp rapeseed or olive oil
Serves 4 – 5
Method
- Heat the oil in a small non-stick pan, add the onion and potatoes and fry for 8 minutes turning frequently until tender but not browned. Add the bacon and fry for 2 minutes, meanwhile beat the eggs in a large bowl. Season with pepper, then stir in the cheese.
- Pour the egg and cheese mixture into the pan, cook gently until firmly set, turn over in the pan or cook under a hot grill for a few minutes until set.
Top Tip
Delicious served with grilled tomatoes. One tomato per person gives this meal 1 portion of your 5-A-Day. |
